dc.description.abstract | The current work is based on a restaurant where the main product, the buffet, has an unknown
cost. This fact prevents the reasoned definition of a selling price determined quantitatively. The
owners, therefore, priced it at R$110,00 without considering an analysis of costs and demand.
For a while, a promotional price of R$99,00 was used on Mondays and Tuesdays to improve
the product profitability, although they were not sure about this action effectiveness. In order
to optimize the company practice, this research was carried out to define in which days the
promotional price should be used and in which days the buffet should be kept at the regular
price, through a case study applied and classified as descriptive and quantitative. The buffet cost
was calculated based on raw material costs, fixed costs and taxes, determining the profit margin
categorized by selling price and day of the week. After that, the buffet performance was
analyzed for each day in relation to demand, buffet share in the revenue, costs and profit margin.
These parameters were then compared, and the behavior of the buffet sales was forecasted
assuming the promotional price in regular-price days. Finally, the analyses resulted that from
Sunday to Thursday the promotional price of R$99,00 should be adopted, while on Fridays and
Saturdays the buffet price should be kept at R$110,00. Under an academic perspective of
pricing, costs and demand, it was possible to achieve positive financial results to the company. | eng |

dc.description.resumo | O presente estudo é retratado em um restaurante onde a empresa tem dificuldade em mensurar
o custo do buffet, seu principal produto. Isso impede que uma decisão fundamentada
quantitativamente acerca do seu preço seja tomada. Assim, os proprietários definiram o preço
de venda de R$110,00 sem realizar uma análise de custos e de demanda. Durante alguns
períodos também foi utilizado preço promocional de R$99,00 (segundas e terças-feiras), a fim
de melhorar a lucratividade do produto, porém não havia certeza da eficácia desta ação. Visando
otimizar a prática realizada na empresa, o objetivo desta pesquisa foi identificar quais dias da
semana devem utilizar preço promocional do buffet e quais devem manter o preço regular, por
meio de um estudo de caso de natureza aplicada, descritiva e quantitativa. O custo do buffet foi
calculado com base nos custos de matéria-prima, custos fixos e impostos, permitindo conhecer
sua margem de lucro diferenciada por preço e dia da semana. Em seguida foi analisado o
desempenho do buffet em dias sem e com promoção em relação a demanda, percentual do buffet
no faturamento, custos e margem de lucro. Posteriormente, esses parâmetros foram comparados
e por último foi previsto o comportamento do buffet com preço promocional em dias sem
histórico de promoção. Por fim, as análises resultaram que de domingo à quinta-feira deve ser
adotado preço promocional de R$99,00 e nas sextas-feiras e sábados deve-se manter o buffet
por R$110,00. Sob a perspectiva acadêmica de precificação, custos e demanda, foi possível
obter resultados positivos financeiramente à empresa. | por |
