Otimização da performance de congelamento de produtos frigoríficos em túneis contínuos
Abstract
O presente trabalho teve como objetivo realizar um estudo para avaliar o desperdício de energia elétrica do sistema de refrigeração nos túneis de congelamento de produtos alimentícios de uma empresa frigorífica da cidade de Chapecó/SC, bem como propor uma solução eficaz para reduzir esta ineficiência. Esta unidade da empresa possui 07 túneis de congelamento contínuos do tipo TRV que são desenvolvidos para trabalhar com o princípio de transferência de calor por convecção forçada. Para tanto, existem embalagens de acondicionamento especiais para transporte do produto durante a travessia dos túneis. Estas embalagens possibilitam a passagem do ar através de suas paredes as quais possuem aberturas específicas para este fim. O ar gelado circunda a região de acomodação e entra em contato direto com o produto retirando a energia térmica armazenada nele através da convecção. Porém, a referida empresa optou por não utilizar este tipo de embalagem para o acondicionamento do produto e em seu lugar implantou um modelo de caixas de papelão sem aberturas nas paredes. Por este motivo, o ar não consegue tangenciar todas as regiões do produto, ficando limitado ao contato direto com o produto na parte inferior e lateral da caixa. A metodologia proposta e validada no trabalho, promoveu uma redução de 50% no consumo de energia, através da diminuição do tempo de congelamento e aumento da eficiência do sistema de refrigeração por meio da otimização do processo gerada pela substituição da embalagem de acondicionamento. Foi proposto a substituição das embalagens de papelão por embalagens de PEAD com paredes vazadas para maximização da eficiência do processo de transferência de calor por convecção forçada. Essa proposta foi avaliada através de uma estudo de caso, onde por meio de ensaios físicos no processo de congelamento do produto, comprovou-se um aumento de eficiência energética superior a 75%. A maximização da eficiência energética se deve, principalmente, à um protótipo de embalagem desenvolvido especificamente para o processo avaliado.
