Avaliação da influência da declaração das propriedades funcionais na percepção dos benefícios para a saúde do consumidor
Abstract
Os alimentos que possuem compostos bioativos em quantidades específicas são
considerados alimentos com propriedades funcionais e exercem efeitos benéficos à saúde.O
objetivo do estudo foi desenvolver formulações de muesli, contendo ou não betaglucana com
alegação funcional, verificar a sua aceitabilidade, e intenção de consumo diante de declarações
de propriedade funcional.Os produtos foram formulados com ingredientes que continham
compostos bioativos com alegação de propriedade funcional. Para realizar a análise sensorial
foram recrutados indivíduos aleatoriamente, sendo excluídos os participantes fumantes e aqueles
que não responderam o questionário corretamente, totalizando 58 participantes. Estes foram
expostos a três amostras dos produtos, sendo: muesli de arroz: flocos de arroz, semente de
abóbora, linhaça marrom, uva passa, canela em pó, mel e leite, sem alegação declarada; muesli
de aveia: aveia, semente de abóbora, linhaça marrom, uva passa, canela em pó, mel e leite, sem
declaração declarada; e muesli de aveia com alegação declarada. Foram verificados os níveis de
atenção à saúde por meio de um questionário socioeconômico elaborado pelos autores. Também
foram aplicados questionários para análise sensorial contendo escalas hedônicas. De forma geral
a formulação de muesli de aveia foi bem aceita. O muesli de aveia com alegação foi a que
demonstrou maior escore com relação à expectativa de benefícios para a saúde, mas a
expectativa foi reduzida depois do consumo. Desta forma, comprovou-se que a declaração de
saúde alegada influenciou a impressão de benefícios do produto funcional.
